What is it and what is it for?

Olive pomace oil comes from the pomace, what is left of the olive at the mill: skin, pulp and stone. In hospitality it is used mainly for frying, and it comes in a 5 litre container.

In the kitchen

In the fryer and in the pan: fried fish, calamari in batter, fried eggs and fritters.

How to store it
