What is it and what is it for?

Sweet paprika is dried, ground red pepper, with no heat. It adds colour and flavour at the same time, and it goes in over a low flame because in very hot oil it turns bitter.

In the kitchen

In marinades, in meat and pulse stews, in the sofrito for a rice dish and on top of octopus with potatoes.
