What is it and what is it for?

Black peppercorns are the berry of the pepper plant, dried whole and not ground. Ground fresh, they give off more aroma than pepper that comes ready ground, and whole they stand up to long cooking.

In the kitchen

In cacio e pepe and carbonara, freshly ground, in meat and fish, and whole in broth, stock or escabeche.
