What is it and what is it for?

Burratina di bufala is a small burrata, 50 g: buffalo milk mozzarella wrapped around stracciatella. It is the right size for a tapa or a plate for one, with no large piece to cut up.

In the kitchen

As a tapa, with tomato and a drizzle of oil, or one per person on the buffet. Also on top of an individual pizza or a plate of pasta.
