What is it and what is it for?
Pomodori secchi are dried tomatoes: as they lose water, the flavour concentrates. That is why a small amount makes itself felt on the plate.
In the kitchen
In salads and sandwiches, chopped into a pasta sauce or a red pesto, and on focaccia or pizza with burrata.
