What is it and what is it for?

The Kalamata olive is purple, almost black, almond-shaped and firm-fleshed. It is served whole, for aperitivo or in a salad, and you recognise it on the plate by its colour.

In the kitchen

In salad with tomato, cucumber and feta cheese, in cold pasta and chopped for a tapenade or olive bread.
