What is it and what is it for?

Capers are the bud of the caper bush flower, picked before it opens. Their flavour is so pronounced that just a few make themselves felt in a sauce or on fish.

In tartare sauce and in puttanesca, with smoked salmon, in vitello tonnato and on pizza with anchovies.
