What is it and what is it for?
What burrata holds inside is stracciatella: strands of mozzarella mixed with cream, without the pouch that holds them. It comes in 250 g packs and is served cold, straight from the pack.
In the kitchen
By the spoonful over pizza as it comes out of the oven, with anchovy or with mortadella and pistachio. Also over pasta, a salad or a slice of toast.
