What is it and what is it for?
Orecchiette means little ears, and that is the shape of orecchiette fresche: a small, hollowed disc of fresh pasta. The hollow of each piece catches the sauce and the small pieces of vegetable or meat.

With friarielli and salsiccia, or with tomato, basil and grated ricotta salata on top.
