What is it and what is it for?

Cornflour is a fine maize flour, in a 2.5 kg box, and it is used above all for thickening. It binds a sauce or a cream without lumps if it is first dissolved in a little cold liquid.

In the kitchen

In meat jus, béchamel and pastry cream, in custard, and mixed with flour for a crispier batter.
