What is it and what is it for?
Ricotta salata pecora is sheep's milk ricotta, pressed, salted and aged until firm, in a 300 g piece. It is grated or crumbled like an aged cheese, but with a milder flavour.
In the kitchen
Grated over pasta alla Norma, with fried aubergine and tomato, or crumbled over a salad or some roasted vegetables.
