What is it and what is it for?

Pieces of pork cooked in their own fat and pressed into a block: that is what ciccioli are. They come in a 2.5 kg piece, which is cut into thin slices or crumbled, depending on the dish.

In the kitchen

In fried pizza and calzone with ricotta, in the filling of casatiello, and in thin slices with bread, as an antipasto.
