What is it and what is it for?

Bresaola is cured beef, served uncooked and in very thin slices. It comes in a 2.7 kg piece to be cut to order, because once sliced it dries out quickly.

In the kitchen

As a starter, with rocket, grana shavings, lemon and oil. Also on pizza as it comes out of the oven, or in a panino with fresh cheese.

How to store it

Fresh: into the cold room as soon as it arrives. It travels chilled from the warehouse and should be used before the date on the pack.
