What is it and what is it for?
Bayo bomba rice is a round-grain variety that absorbs a lot of stock without splitting. The grain stays loose and holds its bite better, which is what you look for in a paella on the menu.
In the kitchen
In meat or seafood paella, in black rice and in arroz a banda.
