What is it and what is it for?
Scotti carnaroli rice is a variety for risotto, with a large grain that releases starch as it cooks. That starch gives risotto its creaminess, and the grain stays whole and firm inside.
In the kitchen
In mushroom, saffron or pumpkin risotto, finished with butter and parmigiano, or in a seafood one.
