What is it and what is it for?

Crudo means uncooked: prosciutto crudo is the leg of the pig, cured with salt. It comes in a 7 kg piece and is served in very thin slices, almost transparent.

In the kitchen

With melon or figs, as a starter. On pizza that is already baked, with burrata, and in a panino with mozzarella and tomato.

How to store it

Fresh: into the cold room as soon as it arrives. It travels chilled from the warehouse and should be used before the date on the pack.
